Topical versus Tiki was a fun and informative seminar led by Daniele Dalla Pola. A definite passion for rum, life, and all things tropical was evident as Daniele taught us the differences between these two types of cocktails, while also mixing us up a few delicious drinks to sample throughout our class.

It’s an accepted truth in the drinks world that no spirit demonstrates as much diversity in style and breadth of range as rum. So before the summer closed, I felt compelled to write about the Tradewinds, a devastatingly delicious tiki-ish drink that combines coconut cream and apricot liqueur. For example, if you are a tiki bar, then you want your menu to reflect cocktails, liquors, beers, and flavors that match a tropical and Caribbean theme, i.e. rums and frozen drinks. And what makes it pretty cool (and different from most tiki-style drinks) is that it features a bitter aperitif, Campari. So, hats off to Aviary’s bartender at the time, Jeffrey Ong, who came up with the genius idea of mixing Campari into his tiki drink. And who doesn’t love Campari? And the name?
