When the Navy was conducting voyages in the Caribbean in the 16 and 1700s they found themselves a plentiful supply of rum. With a much longer shelf life than beer, rum became the sailors’ first choice of tipple. The rum and lemon/lime juice concoction became known as ‘Grog’. Essentially, hungover. This, of course, is disputed.

Credit: Rosebank Whiskey is then put through an aging process, maturing in oak casks which do not contain gluten. Cider, wine, sherry, spirits, port, and liqueurs are all gluten free, although beer, lagers, and ales all contain varying amounts of gluten. Finally, rum is produced using sugar cane, which does not contain gluten.

Then banana flambéed, coconut… Then some high-end wine (great old Pomerol – no, not just any merlot)… Then chicory… Then lots of pineapple liqueur, Malibu, old Muscat wine. Raisins, quince jelly, very old rum. Nose: extreme beehive, wax, propolis, old papers… Mirabelle jam, quince jelly… absolutely brilliant.

The Ledaig Triple Wood is a blend of whiskies matured in three types of casks: wine, bourbon, and port. The whisky was also matured in “a three-cask finish of bold provenance”, with the liquid divided tin three different types of casks for finishing: Bordeaux wine, Calvados, and Guatemalan rum.

The cask used for finishing will usually have previously held a different type of spirit, wine, or other liquid. The Balvenie 14 Year Old Caribbean Cask Whisky is transferred into ex-rum casks. Sherry casks are the most common, but there are plenty of examples of other cask varieties being used.
