Or “I’ll have a strong Rum and Coke.” While it might be easy to order a double Vodka Soda or Gin and Tonic — especially when out at a nightclub or dive bar — it’s not as simple when it comes to a bar’s signature cocktails. Adding an extra pour of rum or mezcal to the mix can lead to undesirable results.

But it was a nightclub mostly, so we weren’t making craft cocktails really. It’s a rum that actually sort of predates rum. I’d also love to see rum more broadly gain attention and understanding. You really had to know somebody. You could make a lot of money in a short period of time, so those jobs were in high demand.
