When Aviation American Gin first hit shelves in 2006, it was something of a novel spirit. Unlike the juniper-forward London dry gins that had long dominated the market, Aviation brought other botanicals to the forefront, with its prominent citrus, spice, and floral notes. Marketed as American-style gin, the new spirit sparked a sea change among domestic craft distillers, who began to experiment more and more with distillations representing their home terroir.

Bourbon doesn’t have to be made in Kentucky. In fact, bourbon is now made in every state and some U.S. territories. And while it’s probably a stretch to call bourbon “America’s native spirit” — that title could equally go to apple brandy or rye whiskey — it’s certainly a distinctly American product anyone in the U.S.A. can make, provided they follow the rules , of course.

It exists for the sole purpose of allowing bartenders to quickly crank out unfussy two- or three-ingredient drinks with cost-effective booze. After conquering low-lift highballs and easy equal-parts concoctions, most aspiring bartenders are eager to step into the big leagues and attempt more intricate cocktails. The techniques become more technical, certain ingredients are less willing to play well with others, and the ever-ominous threat of over-dilution lurks in the shadows. There are many cocktails out there that even after 20-plus tries, the finished product doesn’t quite hit the mark.

It says something when a well-known TV series about Italian food, in an episode about Puglia, ignores the wines of the region in the heel of the boot of southern Italy. Pasta, bread, olives, fish, meats? All well represented. But the wines? Not a single word.
