I would definitely ramp up the juniper and other selection of botanicals and add a smaller piece of cinnamon next time because cinnamon was definitely the predominant flavor– and not in a good way. It would be great in a number of classic cocktail recipes, too. My husband called it “the Christmas gin” after tasting it.
