He set out to embolden the spice notes in Westward Whiskey using finishing casks such as Stout, Pinot Noir, and Rum. more years in Calvados (a refined apple brandy) casks from Normandy, France. A Discovery of Spice was inspired by Miles Munroe’s trip to Taiwan and the food that he tasted there.

And this stout in particular was one of my favorites from the Oregon producer. They focus exclusively on barrel-aged beer, and this iteration on the classic Rhino Suit imperial milk stout, using toasted coconut and rum barrels direct from Barbados, is a showstopper. It reminds me of mulled wine and Christmas cake with freshly lit brandy just poured over the top and dark winter fruits; that sweet sherry note that might remind you of the favored tipple of a kindly old aunt.
