When I made the case for apple brandy last month, I argued that its greatest strength was its ability to partner with just about any other ingredient: whiskey, mezcal, aged rum, cognac, even aquavit — with a little work, apple brandy can harmonize with just about any other base spirit.

For a high-proof nog, we used Wild Turkey 101 bourbon and Smith & Cross Jamaican rum. For a lower-proof mix, we used E&J brandy mixed with Appleton Estate signature rum. For the higher proof combo, we’ll tilt the balance slightly toward the bourbon, since the Smith & Cross rum is so aggressively funky.
