I started barbacking at an awesome little beer and bourbon bar called Bondurants on the Upper East Side (of Manhattan). It’s a pretty straightforward riff on a French martini but uses a really good white rum and adds some egg whites. Liqueur , Rum French Vacation Ingredients 2 oz. of white rum 3/4 oz.

I was lucky enough to find a barback job at a place called King King on Hollywood Boulevard in Los Angeles. It’s a rum that actually sort of predates rum. I’d also love to see rum more broadly gain attention and understanding. It seemed like anybody could be a commercial actor. You really had to know somebody.

After nine years at Icebergs, he recently won bar manager of the year at the Australian Bartender Magazine Bar Awards. After a change in ownership, I took a break and landed a job at the Rum Diaries in Bondi, but it wasn’t my vibe. Luckily, a friend hooked me up as a barback at Icebergs. Those initial shifts blew my mind!
