In 2017, Andro Chung co-founded Dyke Bar Takeover to bring pop-up queer parties and LGBTQ+ artists to straight bars and spaces. For much of the brewery’s first half decade, Kunz worked first by himself and then with one other person to make and distribute his pilsners and IPAs. Korean karaoke parlors serve 3 a.m.

In 2017, a quartet of friends—including Tom Fisher Riemondy, the great-great grandson of Albert Fisher—revived the brewery, opening in an old auto body shop. Fisher brews more than 100 unique varieties per year, from their flagship pilsner to experimentally hopped IPAs to a classic British mild.

Included in the blend is a 2017 Pilsner aged in French oak, a 2015 Pilsner aged in American oak (char 3), a 2013 Stout aged in French oak, and a rye whiskey. They sought out renowned master distiller Marko Karakasevic to produce their whiskeys. This third batch of Winter Run is a blend of rye and hop-flavored whiskeys.

Many of these have medaled at top spirits competitions, like Costco’s bourbon, which claimed a top prize at 2017’s New York World Wine & Spirits Competition. Over the last decade, Kirkland has produced everything from IPAs, pilsners , and a summer ale to more-of-the-moment beers like a Citra Hop Session Ale, first made in 2021.
