Like Scotch, Irish whiskey has a long tradition of aging in ex-sherry casks that hail from this part of the world. The ex-bourbon, American oak backbone of so many Irish and Scotch whiskeys today really didn’t become the norm until the 1960s. Back in the day, the wine would have been imported in casks.
