In 2016, I opened ROKC (Ramen Oysters Kitchen Cocktails) in Hamilton Heights, and following its success, I opened NR (’N ROLL) on the Upper East Side in Fall of 2019. So went spirits critic Robert Whitley’s 2002 review of Ciclón, a just-released Barcardí product that combined the brand’s Gold Rum with “blue agave” tequila and a “hint” of natural lime juice. The spirits giant’s own motto was a little more blunt: “90% rum, 10% tequila, 100% un-be-lievable!” It, too, was a smash hit.

There’s tequila from Mexico, yellow Chartreuse from France, and Germany’s Jägermeister to booze things up while simple syrup and an egg white round things out. The cocktail combines gold rum , lime juice, honey syrup, and Champagne or sparkling wine , but since these games are held in Paris, we recommend opting for the French sparkler.

By the time Booker and Dax closed in 2016, I was the head bartender, and I spent the next year at the NoMad learning to make a lot of very good drinks very quickly. We chatted rum styles and tropical drinks and I was immediately a fan — he wore his love for, and knowledge of, drinks and spirits on his sleeve then as he does to this day.
